The cheese market in Gouda is real.

The one in Edam is a "re-enactment" for the benefit of tourists. It ceased to be commercial in 1922.

Gouda is between Utrecht and Rotterdam and Edam is just north of Amsterdam. That's the difference...

Edam/Gouda became popular in the 70s as it was so cheap. Then came the cheese fondue craze with Emmertal and Gruyere

You can get them in your part of Europe in London called Waitrose.

It sweats like fuck in the 40 degree heat I'm experiencing at the moment - cheese IS available at the local mall/hypermarket but it's all Aussie/NZ/US clones.

We had a round of (proper) Stilton for Xmas in Thailand the year before last (to educate the locals), and that was well on the way to becoming a thick, lumpy shake before we'd gotten halfway through it.

Pop back to Europe for a top-up every 2/3 months, depending on how many people I'm shopping for.

Don't like either of them much. Too dull. I far prefer French soft cheeses and some of the blues too. Have a taste of Fourme d'Ambert if you get a chance.

In the Wholefoods cheese area you can get mature gouda that's pretty good.

In Germany they use it pretty much on every pizza place instead of mozzeralla. Mind you not many places use proper mozzeralla let alone di buffulo.

Gruyere cheese is the dogs bollocks

Gouda can come from anywhere in the world, as it isn't a protected name.

Not many people know that, but Wiki does.

Some varieties of Gouda have protected names.

On a related note, Stilton can only come from Derbyshire, Nottinghamshire or Leicestershire, which excludes Stilton, the village where it was seemingly invented, as this is now in Cambridgeshire.

Edam is the cheese equivalent of Fosters lager - weak and bland. I go the Netherlands a lot and have never seen it in the shops there. Most of the Gouda you get over here isn't much better but the mature version is decent. They don't tend to call it Gouda over there but give it more local derivations. Always go for mature versions.
